Chocolate Chip Orange Bread Pudding

Makes 8 to 10 servings

Ingredients
8 cups cubed challah or other soft golden bread
6 eggs
1 cup granulated sugar
2 cups milk
2 cups heavy cream
ΒΌ teaspoon salt
1 teaspoon vanilla extract
Grated rind of 1 orange
1 cups chocolate chips

Preheat oven to 350 degrees. Cut the bread into 1-inch cubes and place in an 8- inch square baking pan. In a large mixing bowl, whisk the eggs and sugar together. Whisking constantly, gradually add the milk, cream, salt, vanilla, and orange rind. Pour this over the bread cubes and let soak until absorbed about 15 minutes. Sprinkle the chips over the top and work them in slightly (they tend to sink to the bottom during cooking so keep them up top if possible) Cover with plastic wrap and let soak chilled up to 2 days. Bake until set in the center (test with a knife) and golden brown on top, about 40 to 45 minutes. Serve warm or chilled.
