Cenitare (Latin for 'to dine often'), a restaurant management and development company led by culinary duo executive chef Rick Tramonto and executive pastry chef Gale Gand, announce the Thursday, October 12 opening of Gale's Coffee Bar in The Westin Chicago North Shore, located at 601 N. Milwaukee Avenue in Wheeling, IL.

Gand, best known for her four-star plated desserts at Chicago's world-renowned restaurant Tru, has always had a history of presenting simpler fare on her Food Network show "Sweet Dreams" and also in her various cookbooks. Now with the advent of Gale's Coffee Bar, the public can sample this facet of her cuisine firsthand. Gale's Coffee Bar, a comfortable pastry and coffee shop, will serve great coffee drinks, breakfast pastries, cookies, baked goods, quick pick-up lunch sandwiches and other items throughout the day. Designed by Johnson Studios of Atlanta, the design team that worked with Tramonto and Gand on Tru, Gale's Coffee Bar is a bright and fresh space with a firm nod to the twentieth-century European style that Gand adores. With indoor café seating, Gale's Coffee Bar is the ideal location for a quick breakfast, lunch or mid-day break. It is also perfect for quick "grab-and-go" options.

A large selection of baked goods for breakfast will be offered, including her Whole Wheat Banana Breakfast Breads, Apple Turnovers, Passion Fruit Poppy Seed Pound Cakes; assorted cookies such as Oatmeal Cinnamon and Citrus Shortbread; bagels and cold pizza. Several panini and sandwiches will be available including Ratatouille & Muenster Panini, Ham, Brie & Asparagus Panini, Roast Beef & Horseradish Sandwich on focacia and Curried Egg sandwich and Classic Tuna sandwich. Salads, soups and maki rolls will round out the savory options. Pastry treats will be offered throughout the day, including Donut Holes. Good Plane Food, healthy grab-and-go meals created to feed travelers and ease the discomfort of air travel, will be made fresh daily for take out.

A reflection of the "European Café Experience", where quality is put first and coffee drinks are served with genuine expertise with a keen eye towards preparation and strategically selected ingredients, Gale's Coffee Bar will serve Illy Coffee and specialty drinks including Iced Biscotti (iced latte with chocolate and hazelnut) and Gelato Affoggato (house made gelato smothered in espresso). Fresh passion fruit lemonade, Gale's signature Root Beer Floats, splits of Champagne and half and quarter-bottles of wine will be sold, as well as a signature line of chocolate bars and Gale's Root Beer.

Gale's Coffee Bar is committed to using green products whenever possible including organic milk, fair trade sugar and biodegradable packaging.
