Brazilian Cheese Bread or Pao de Queijo

Makes about 24 pieces

Ingredients
3/4 cup vegetable oil
1 cup milk
1 egg
6 ounces grated Parmesan
1 1/2 cups tapioca flour
1 teaspoon salt

Put all the ingredients in a blender and combine or whisk together. Spray mini muffin tins with oil/flour spray. Fill 3/4 full with the batter. Bake at 350 degrees for 15-20 minutes till puffy and golden brown. Turn out of the pan immediately and eat hot. You can reheat them just before serving.
