Panetone French Toast

Makes 1 cake

Ingredients
4 eggs
1 cup whole milk
1/3 cup heavy cream (or milk if you don’t have cream)
1 pinch salt
1 tablespoon granulated sugar
½ teaspoon pure vanilla extract
¼ teaspoon almond extract
¼ teaspoon cinnamon
8 wedge shaped slices of Panetone

Heat your griddle to medium low heat.

In a medium bowl, whisk the eggs well. Gradually whisk in the milk and cream. Whisk in the salt, sugar, vanilla, almond and cinnamon. Pour the mixture into a shallow baking dish. Working in batches if necessary, place the bread in the dish and let soak for a minute or so, then turn and soak on the other side.

Butter your griddle and let it bubble then place the soaked slices on to brown. Flip to the other side when you like their doneness and cook. Serve hot with real maple syrup (go on, get the real thing for a change).
