Flapjack (Oat and brown sugar bar)

Makes an 8 X 12 inch pan

Ingredients
13 Tablespoons (175 grams) unsalted butter, melted
Heaping ½ cup (175 grams) Golden Syrup or light corn syrup
2/3 cups (175 gram) sugar (if using Golden Syrup)
or muscavado, demerara or light brown sugar if using light corn syrup
4 cups (350 grams) Old Fashion rolled oats (also called Porridge oats or Scottish oats)

Preheat oven to 350 degrees. Line a ¼ sheet pan or 8 X 12 inch pan with parchment paper making sure you have some over hang on the 2 long sides for grabbing later.

In a sauce pan melt the butter with the syrup and sugar till melted and combined. Add the oats and stir well to combine. Pour into the lined baking pan and spread out evenly. Bake for 15 – 20 minutes till light golden brown. Let cool 10 minutes then lift out of the pan and cut into bars while still warm. Return to the pan then let cool before removing from the pan.
