Cured Salmon stuffed Avocados with Goat Cheese, Cucumber, and Chives

Makes 16 servings
4 mini avocados, cut in quarters
3 oz. Smoked or cured salmon
3 oz goat cheese
1 Persian cucumber
2 Tablespoons snipped chives
Fresh ground pepper

Cut the avocados in quarters and peel of the peel. Place on a serving platter. Fill the cavity with a ribbon on smoked salmon, a hunk of goat cheese, a ½ moon of cucumber, then snip chives over them and grind on some fresh pepper.
