Hot Spinach Dip

Serves 8-10
1 Tablespoon extra virgin olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 pounds spinach, washed
½ cup milk
8 ounce bar reduced fat cream cheese
3 dashes of Worcestershire Sauce and Tabasco
¾ cup grated domestic mozzarella cheese
Salt and pepper

Preheat oven to 400. In a large sauté pan heat the oil then sauté the onions till translucent. Then add the garlic and cook 30 – 60 more seconds. Add the spinach, in 2 batches if needed, and wilt it seasoning with salt and pepper. Place in a strainer and drain. Meanwhile in the same pan, heat the milk, then whisk in the cream cheese, Worcester and Tabasco and melt. Add the spinach and ¼ cup of the Mozzarella and combine. Pour into a 1 ½ quart oiled baking dish and top with the remaining ½ cup mozzarella. Bake for 20 – 25 minutes till golden brown. Serve with sliced bread, bread sticks, or crackers.
